Take an avventura to Italy with Massimo Capra

You know his classic moustache and you love devouring his takes on classic Italian dishes. Chef Massimo Capra’s Boccone Trattoria serves up pizza, pasta, panini, breakfast options and even a kid’s menu to ravenous travellers. Most importantly, Capra is proud to be at Pearson. “This is where the world meets,” he says. “The airport was a perfect choice for me.” Saluti and cheers to that.

Roger Mooking serves the world on a plate

Chef Roger Mooking has always been himself: a proud Trinidadian who came up in Toronto as a beloved cook, but also as a multimedia artist. And since 2015, Mooking has been dazzling Pearson passengers at Twist, his temple to fresh takes on Canadian comfort food. (A  fried-chicken sandwich with daikon and chili flakes, anyone?) “In an environment like the airport,” Mooking says, “you can really communicate with people, through food, across cultures.”

Lynn Crawford delivers dishes for every season

Ontario has some of the best year-round ingredients in the world. So why not showcase them every day? “My dishes are family favourites made with the best local products,” says Chef Lynn Crawford, a Food Network staple and Toronto restaurant-scene veteran. At the Hearth, she and her team of talented cooks offer delectable flatbreads, salads, sandwiches and more—all fired up in the spot’s famous hearth, of course.
